Pork Stew

 Pork stew is a hearty and comforting dish, perfect for cool weather or when you're in need of a warm, satisfying meal. Here's a simple recipe to make a delicious pork stew:



   Ingredients:

- 1.5 lbs (700g) pork shoulder or pork belly, cut into bite-sized pieces

- 2 tablespoons olive oil

- 1 large onion, chopped

- 3 cloves garlic, minced

- 2 carrots, sliced

- 2 potatoes, diced

- 2 celery stalks, sliced

- 1 cup (240ml) chicken or vegetable broth

- 1 cup (240ml) white wine or water

- 1 can (14.5 oz) diced tomatoes, with juice

- 2 tablespoons tomato paste

- 1 teaspoon paprika

- 1 teaspoon dried thyme

- 1 bay leaf

- Salt and pepper to taste

- Fresh parsley, chopped (for garnish)



   Instructions:


1. Brown the Pork:

   - Heat the olive oil in a large pot or Dutch oven over medium-high heat.

   - Add the pork pieces in batches (to avoid overcrowding) and brown them on all sides. Once browned, remove the pork from the pot and set aside.



2.   Sauté Vegetables:

   - In the same pot, add the chopped onion, and cook until soft and translucent, about 5 minutes.

   - Add the minced garlic and cook for an additional minute until fragrant.


3.  Deglaze and Combine:

   - Pour in the white wine (or water) to deglaze the pot, scraping up any browned bits from the bottom.

   - Stir in the tomato paste, paprika, and thyme.


4. Add Remaining Ingredients:

   - Return the browned pork to the pot.

   - Add the carrots, potatoes, celery, diced tomatoes (with juice), and bay leaf.

   - Pour in the chicken broth, ensuring the ingredients are submerged. If needed, add more broth or water.


5.    Simmer:

   - Bring the stew to a boil, then reduce the heat to low.

   - Cover and simmer for about 1.5 to 2 hours, or until the pork is tender and the vegetables are cooked through.


6.     Season and Serve:

   - Taste the stew and adjust the seasoning with salt and pepper as needed.

   - Remove the bay leaf.

   - Garnish with fresh parsley before serving.



      Serving Suggestions:

Serve the pork stew with crusty bread or over a bed of rice or mashed potatoes. It pairs well with a side salad or steamed vegetables.
