Dhal Wade is a popular Sri Lankan snack made primarily from split lentils, seasoned with spices, and deep-fried to create a crispy, savory treat. Here's a basic recipe for making Sri Lankan Dhal Wade
Ingredients:
1 cup red lentils (masoor dal)
1 small onion, finely chopped
2-3 green chilies, finely chopped
1 tsp cumin seeds
1/2 tsp fennel seeds (optional)
1 tsp chili powder (adjust to taste)
1/4 tsp turmeric powder
1 tsp curry leaves, chopped
Salt to taste
Oil for deep frying
Instructions:
1. Soak Lentils : Wash the lentils and soak them in water for about 2 hours.
2. Grind the Lentils : Drain the soaked lentils and grind them coarsely using a blender. Don't add too much water; the mixture should be thick. Some whole lentils in the mixture are fine for texture.
3. Prepare the Mixture : In a bowl, mix the ground lentils with the chopped onions, green chilies, cumin seeds, fennel seeds (if using), chili powder, turmeric, curry leaves, and salt.
4. Shape the Wade : Take small portions of the mixture and shape them into small patties or round balls, slightly flattened.
5. Deep Fry : Heat oil in a deep pan. Once hot, gently slide the lentil patties into the oil. Fry on medium heat until they are golden brown and crispy.
6. Drain & Serve . Remove the fried wades and place them on paper towels to absorb excess oil. Serve hot with a coconut chutney or tamarind sauce.
