Ingredients:
500g chicken (bone-in or boneless, cut into pieces)
2 onions (finely chopped)
2 tomatoes (pureed)
4 cloves garlic (minced)
1-inch ginger (minced)
2-3 green chilies (slit)
1 cup yogurt** (optional)
1 teaspoon turmeric powder
1 teaspoon red chili powder 1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala
2-3 tablespoons cooking oil or ghee
1 teaspoon cumin seeds
1 bay leaf
Salt (to taste)
Fresh coriander leaves (for garnish)
Instructions:
1. Marinate the Chicken
- In a bowl, mix the chicken with yogurt (if using), turmeric powder, red chili powder, and a little salt. Let it marinate for at least 30 minutes.
2. Prepare the Curry Base
- Heat oil or ghee in a large pan or pot over medium heat.
- Add cumin seeds and bay leaf, letting them sizzle for a few seconds.
- Add chopped onions and sauté until golden brown.
- Stir in the minced garlic, ginger, and green chilies. Cook until fragrant.
3. Cook the Tomatoes
- Add the tomato puree and cook until the oil begins to separate from the mixture.
4. Spice it Up
- Add coriander powder, cumin powder, and any remaining turmeric and chili powder. Cook the spices for a minute or two.
5. Add the Chicken
- Add the marinated chicken pieces to the pan. Stir well to coat the chicken with the spice mixture.
- Cook the chicken for about 5-7 minutes, allowing it to brown slightly.
6. Simmer the Curry
- Add a cup of water (or more, depending on the consistency you prefer).
- Bring the curry to a boil, then reduce the heat and cover the pan. Let it simmer for 20-30 minutes, or until the chicken is cooked through and tender.
7. Finish and Serve
- Stir in the garam masala and adjust salt to taste.
- Garnish with fresh coriander leaves.
8. Serve
- Serve hot with steamed rice, naan, or roti.
