Jackfrut Curry

 Jackfruit curry is a flavorful dish often made with young, unripe jackfruit, which has a texture similar to pulled pork when cooked. Here's a simple recipe:


 Ingredients:

 500g young jackfruit (fresh or canned)               2       tbsp oil (vegetable, coconut, or mustard oil)-                                                                                 1 large onion, finely chopped

   2 tomatoes, finely chopped

  4 cloves garlic, minced

     1-inch piece ginger, minced

    2 green chilies, slit lengthwise

     1 tsp cumin seeds

    1 bay leaf

   1 cinnamon stick

  2-3 cloves

    1 tsp turmeric powder

    1 tsp red chili powder

   1 tsp coriander powder

  1 tsp garam masala powder

 1/2 tsp cumin powder

 1/2 tsp fennel powder (optional)

  Salt, to taste

  1 cup coconut milk or water (for a thinner curry)

  Fresh coriander leaves, for garnish


        Instructions:


1. Prepare the Jackfruit

   - If using fresh jackfruit, peel and cut it into medium-sized pieces. Boil in salted water for 10-15 minutes until tender, then drain.

   - If using canned jackfruit, drain and rinse the pieces.


2. Spice Tempering

   - Heat the oil in a large pan or pot over medium heat.

   - Add the cumin seeds, bay leaf, cinnamon stick, and cloves. Fry until fragrant, about 1 minute.


3. Sauté the Aromatics

   - Add the chopped onions and sauté until golden brown.

   - Add the garlic, ginger, and green chilies. Cook for another 2 minutes until the raw smell disappears.


4. Cook the Tomatoes

   - Add the chopped tomatoes and cook until they soften and oil starts to separate from the mixture.


5. Add Spices

   - Add the turmeric powder, red chili powder, coriander powder, cumin powder, and fennel powder (if using). Stir well to combine.



6. Cook the Jackfruit

   - Add the jackfruit pieces to the pan, coating them well with the spice mixture.

   - Cook for 5-7 minutes, stirring occasionally.


7. Simmer

   - Pour in the coconut milk or water. Stir and bring to a boil.

   - Reduce the heat and let it simmer for 20-25 minutes, allowing the jackfruit to absorb the flavors.


8. Finish

   - Stir in the garam masala powder and salt. Cook for another 2-3 minutes.

   - Garnish with fresh coriander leaves.


9. Serve

   - Serve hot with rice, roti, or naan.
